Try This Filling, Easy-To-Make Baked Potato Soup!

Whenever I go to a restaurant and I have the option to order a side dish, I always go for a baked potato with all the fixings – sour cream, onions, shredded cheese, and bacon bits. YUM! But what if you could take the flavour of that side dish, and turn it into an amazing soup that will fill you up much more? Well, now’s your chance! Below is the recipe, but don’t be intimidated by the large ingredient list – the recipe has you combining everything in a few simple steps anyways!

Ingredients: 8 peeled and chopped  potatoes, 4 finely chopped shallots, 1 finely chopped  yellow onion, 3 minced cloves of garlic, 1 teaspoon of finely chopped fresh parsley, a teaspoon of dried basil, 3 cups of chicken broth, 0.75 cups of milk, a quarter cup of cream, a half teaspoon of pepper, a teaspoon of salt, cooked and chopped bacon, chopped scallion, and shredded cheese.

Directions: In a pot, place your potatoes, shallots, onion, garlic, and parsley. Mix in the chicken broth, milk, cream, and seasoning. Let the soup simmer, and fry up your bacon in the meantime. Add it to the soup once the soup starts cooking, followed by your scallions and cheese. When the potatoes feel tender, remove the heat and blend the mixture until it is smooth in texture. Pour the soup in a bowl, and top it with bacon, cheese, and scallions.
