Ingredients: 1 minced clove of garlic, 1 diced onion, a pound of lean ground beef, 1 pack of low-sodium taco seasoning, 1 cup of strained salsa, 1 cup sour cream, a can of cream-of-chicken / mushroom soup, 1 cup of shredded cheese, a large bag of Doritos, diced tomatoes and chopped lettuce (last two are optional)

Directions: While preheating the oven to 350 °F. Cook garlic and onions, and ground beef in a heated pan with some olive oil until the beef browns. Add in taco seasoning and a half cup of water, stirring until thickened. Remove the pan from the heat. In a mixing bowl, combine the strained salsa and sour cream thoroughly. Add in the soup, shredded cheese, and cooked beef – stir well! In a separate casserole dish, add 1.5 cups of Doritos chips and lightly crush them. Add half the beef mixture on top of the chips, and add more crushed chips on top of the beef layer. Add the rest of the beef mixture, and add more crushed chips onto this top beef layer. Finally, sprinkle more shredded cheese on the very top. Cover the casserole dish with aluminum foil, and bake in the oven for 30 minutes. Add in the optional lettuce and tomatoes as toppings. Enjoy!
