YUM: Do This Collard Greens Chicken Roll-Up Recipe!

This is definitely one of the more original recipes that I have tried, since I just usually go for the straightforward stuff that everybody recommends when it comes to baking and cooking. Usually, with the more innovative recipes you need more ingredients, more prep, and more time to cook the meal. But this recipe ended up being faster than most things I cook on a daily basis, so I thought I’d share it with you. Enjoy!

Ingredients: 1 pound of sliced chicken, salt and pepper, olive oil, 4 large collard greens 1 large avocado, 1 tablespoon of cilantro, half a lime, half a teaspoon of hot sauce, 1 large cucumber, half a cup of black olives

Directions: Season chicken with salt and pepper, and pan-fry the chicken in olive oil over medium heat. Boil water, cook the collards in it for a minute, and dry them off. In a large mixing bowl, combine the avocado, cilantro, lime juice, hot sauce, salt, and pepper. Slice the cooked chicken, cucumber, and olives. In each collard green , line up the avocado mixture, one chicken slice, one cucumber slice, and several olives. Roll the collard green, and don’t forget to fold in the sides. Serve it with a dipping sauce of your choice!
