YUM: Use Your Leftovers To Make Mashed Potato Pancakes!

The holiday season is sadly coming to a close, with work days starting tomorrow for many people and the cheer slowly fading away from all of us. All we have left to remember of it is seeing other houses that have yet to take their decorations down, and all of the gratuitous leftovers from all the food that we tried to shove down our mouths.

However, that doesn’t mean that you still can’t make the most out of it, and the recipe below will show you how to take those leftover mashed potatoes and turn them into some delicious pancakes. Enjoy!

Ingredients: One cup of leftover mashed potatoes, a cup of flour, and butter

Directions: Scoop the leftover mashed potatoes with an ice cream scoop spoon and form it into a ball like shape. Squash the ball into a pancake shape in a pre-prepared bowl of flour to coat it.Fry the mixture on medium to medium high heat in a butter-soaked pan. Cook the pancake until both sides are brown, and drain it on a paper towel. Repeat this process for as many pancakes as needed. Use salt and other toppings to enhance the flavour.
